Type 2 is a high-fibre sweetener intended as an alternative to sugar. It can be evaluated in beverages, desserts, confectionery, baked goods and other prepared foods.
For initial recipe trials, use 2.5 g of Type 2 in place of 5 g of sugar by weight. Sweetness, texture and processing performance should be tested in each application.
